Chocolate Log with Candied Mint Leaves

This delicious chocolate log is the perfect dessert centrepiece for Christmas dinner. A light, fluffy sponge made with Food Thoughts  Organic 100% Cocoa Powder is filled with peppermint cream and decorated with coffee ganache and candied mint leaves.  Although it looks rather sensational, it’s actually really quite easy to put together.  Make it on Christmas Eve and keep in the fridge ready for the big day.
