Easter Chocolate Simnel Cake


Confession time: this is not your traditional simnel cake, because it contains absolutely no marzipan (which I hate). This is my version of a simnel cake for chocoholics, with a light walnut sponge, fluffy coffee-flavoured buttercream and rich ganache, all topped off with homemade chocolate truffles in place of the traditional marzipan balls. Adding Food Thoughts 100% Cocoa Powder to your truffles and ganache is my top tip for serious richness and a gorgeous velvety texture.

Tip: Fluff is an American product that you can buy in the supermarkets – it’s basically just spreadable marshmallow. I always add it to buttercream when I need to do a smooth covering of a whole cake, because it makes the buttercream so easy to spread.
