Gluten Free Cacao Cookies

Heard of the new healthy trend for cacao nibs? They’re basically cacao beans which have been roasted, separated from their husks and broken up, and they’re packed with good stuff, from antioxidants to iron and fibre. While they do have a chocolatey taste, the flavour is much darker and less sweet than the processed chocolate you can buy in the shops. This means they’re ideal for a more grown-up-tasting treat – these cookies are full of rich dark flavour and a great crunchy texture from the oats and hazelnuts. They’re also gluten-free!
