Vegan Chocolate Chip Pancakes
Delicious, for any morning, vegan chocolate chip pancakes from Rachel at RawberryFields.
The beauty of these yummy vegan chocolate chip pancakes is that they are slightly healthier, as they don’t contain any flour or refined sugar. They are easy and quick to make – just right for a busy day when you need to whip up something less time consuming, but healthier and really tasty.
Instead of traditional chocolate chips, we have used in our version a creamy, yet vegan alternative – our dairy-free chocolate chips Food Thoughts Oat Mylk Chocolate Chips. You will need
- 1.5 cups of oats
- 1 cup oat milk
- 2-3 small ripe bananas
- 1 heaped tbs Food Thoughts Organic Cacao Powder
- 1 tbs Food Thoughts Oat Mylk Chocolate Chips
- 2 tbs maple syrup
- Coconut oil for frying
Method
Place your oats in a blender and pulse twice to roughly process them into a floury texture.
Add the oat milk, bananas, maple syrup and cacao powder and blend until smooth. Note: The mixture should be slightly thick and similar to a traditional pancake mix, so add the bananas in one at a time, and check consistency, as you may only need to use two.
Fold in the chocolate chips (or nibs) by hand.
Heat a non-stick pan over a medium heat. Add a small amount of coconut oil when the pan is hot.
Pour the mixture into pancake shapes into the pan to start bubbling ensuring the are slightly less liquidy before you flip them.
Cook for another minute or so on the other side and serve immediately - preferably with some fresh fruit and maple syrup.
