Easy Chocolate Waffles
Tired of the same old cereal or toast for breakfast? Well we have a nice alternative for you, especially if it’s a special occasion or just a weekend treat. These Easy Chocolate Waffles are a delicious, lighter alternative to pancakes.
Shaking up the traditional waffles recipe, these Easy Chocolate Waffles are made with Food Thoughts Organic Cacao Powder which adds an intense chocolatey experience to the breakfast. Finish with your favourite toppings such as honey and fresh fruits, or yoghurt, almond flakes, fresh fruits and dark chocolate sauce like we’ve done here. For a truly decadent chocolaty pouring sauce, we’ve used Food Thoughts Pure Cacao Melts (100% natural chocolate), just make sure you adjust the levels of sweetness as these are natural and thus sugar-free.

You will need
- 100g unsalted butter (softened)
- 100g caster sugar
- 1/4 tsp vanilla essence
- 2 free range eggs (large) - separated
- 120g plain flour
- 1/4 tsp baking powder
- 2 tbsp Food Thoughts Organic Cacao Powder
- Pinch of salt
- 250ml milk
- 60g ground almonds
- 60g Food Thoughts Luxury Dark Chocolate Chips (optional)
- CHOCOLATE SAUCE (optional)
- 100g Food Thoughts Pure Cacao Melts
- 30g unsalted butter
- 1.5 tbsp milk
- SERVING SUGGESTIONS
- Yoghurt, maple syrup, fresh fruits (e.g. strawberries, raspberries, blueberries, figs, cherries), almond flakes (or any other nuts your prefer)

- EQUIPMENT: Waffle iron
Method
Place the softened butter, sugar, vanilla essence and egg yolks in a bowl and mix together.
Mix the flour, baking powder, cacao powder and salt together. Add these dry ingredients to the above mix. Then mix into the milk. Mix this with a hand mixer until it is fully blended.
Add the ground almonds and the dark chocolate chips (optional).
Heat the waffle iron (highest level) and lightly spray with oil. Pour the mixture into the waffle iron until it equally fills half the form (don't fill the completely as it will then spill over). Let it sit for about 20 seconds until you see bubbles appear on the edges (as you would see in pancakes). Then close the lid for 3 minutes.
After 3 minutes, carefully lift the waffle from the waffle iron. The waffle will initially be soft but once placed on a wire rack will crisp up.
Serve it up with your favourite toping.
