Chocolate Cookie Dough Bars

This no-bake recipe is the ultimate combination of rich, chocolatey indulgence and wholesome ingredients. With all the flavour of a traditional cheesecake, yet none of the guilt. Don’t let the healthy twist fool you; these cookie dough bars are creamy, chocolatey, and downright addictive.
You will need
- For the cookie dough crust:
- 100g nut or seed butter
- 100g liquid sweetener
- 1 tsp vanilla extract
- 200g oat flour (blended oats)
- 1/4 tsp salt
- 40g Chocolate Coated Cacao Nibs
- For the chocolate cheesecake:
- 200g smooth cottage cheese (blended chunky cottage cheese OR cream cheese)
- 150g yoghurt
- 60g liquid sweetener
- 60g Organic Cocoa Powder
Method
Add cookie dough ingredients to a bowl and mix to combine - you can add a splash of milk if it seems too dry.
Use some of the cookie dough to roll into small cookie dough balls and set aside for later.
Press the remaining cookie dough into a loaf pan or small container.
Mix together the cheesecake ingredients until smooth; add the cheesecake filling onto the cookie dough base.
Add the cookie dough balls on top, refrigerate for at least 2 hours or until set, then slice into bars and enjoy!
