Did you know that sponge cake can be frozen for up to three months?!⁠

We're not sure we could resist cake for that long... But, if you'd like to get a bit of a head start on a desert for over the Christmas period, then this is a great option.⁠

Once you've baked your sponge cake(s), allow to cool completely. Then, wrap with plastic wrap and repeat with another layer of plastic wrap to help prevent freezer burn. Cover with aluminium foil, write the date on and place in the freezer. ⁠

Tip: If you have more than one cake layer, it’s best to wrap them individually to prevent them sticking together when they defrost.⁠

To defrost, remove the layers of aluminium foil and plastic wrap, and stand at room temperature for 2-3 hours. ⁠
