Chocolate Pancake Pizza

Healthy and fun, this Chocolate Pancake Pizza is going to become the next favourite thing to any family, especially as it is fully adaptable to all tastes and dietary requirements.
We have gone for a classic peanut butter and banana combo, enriched with dark chocolate. Nourishing Niki is known for her healthy, easy recipes that nourish ones’ soul and mind. For this recipe, she’s used Food Thoughts Organic Cocoa Powder which contains no added sugar, additives or flavourings. It is also only lightly alkalised, which means it retains more of its nutrients. For an extra crunchiness, Nikita has added a handful or two of Food Thoughts Chocolate Coated Cacao Nibs (winners of a Great Taste Award 2022). They contain high nutrient and flavanols and maintain their natural fibre and protein, not to mention they are delicious!
Why have regular pancakes when you can have one giant chocolate pancake and turn it into a pizza! Add your favourite toppings to this Chocolate Pancake Pizza, slice it and enjoy!
You will need
- For the pancake pizza base
- 70g plain wholewheat flour
- 20g Food Thoughts Organic Cocoa Powder
- ½ tsp baking powder
- ½ cup milk of choice
- 1 tbsp maple syrup
- Toppings
- Peanut butter
- Sliced ripe banana
- Handful Food Thoughts Chocolate Coated Cacao Nibs
Method
Heat a non-stick frying pan to medium heat.
Add all pancake base ingredients to a bowl and whisk until combined.
Pour the batter into your warm frying pan, then spread it into a large pancake. Leave it to cook for 3-5 minutes. Loosen the edges and then flip over with a spatula. If you are unable to flip it, leave for an extra 2 minutes. If you've managed to flip it, let it cook for another minute or so on the other side.
Once cooked, add your favourite toppings!
