Homemade Fruit & Nut Chocolate Bars

Gorgeous smooth chocolate bars, made with organic ingredients, hand-made and filled with all the things that we love: orange and line zest, nuts and dried fruits, nut butters or anything else that you enjoy. We have made ours dark and rich, using Food Thoughts Organic Cacao Powder, but if you want a milder chocolate flavour, you can replace this with Food Thoughts Organic Cocoa Powder. Perfect also as a homemade gift, that always means so much to the receiver and leaves them with the greatest impressions. These colourful fruit and nut chocolate bars look really pretty in a gift box. But be warned: make sure you make enough for both yourself and the recipient, because the temptation to have them all is huge!
You will need
- FOR THE BARS
- 120g coconut butter
- 75g Food Thoughts Organic Cacao Powder
- 75g maple syrup
- Pinch of fine sea salt
- FOR THE FILLING
- Handful of dried white mulberries
- 1 tbsp Food Thoughts Roasted Cacao Nibs
- Roughly chopped pistachios
- Juicy dried cranberries
- 1 tbsp natural crunchy peanut butter
- Generous pinch coarse sea salt
Method
Place all CHOCOLATE ingredients in a large heat proof bowl. Pop the bowl over a pan of lightly simmering water and melt everything whisking with a hand whisk until smooth. If you don't have chocolate block moulds, you can improvise by double lining a square or bread loaf tin with cling film to make your chocolate blocks.
You can vary what you put in each bar: I topped two of them with mulberries, Cacao Nibs, pistachios and cranberries. And for the third one, I put some chocolate on the bottom of the mould, spread it evenly and filled with dollops of crunchy peanut butter and some sea salt flakes followed by a top up of the rest of the chocolate.
Place the moulds or tins in the fridge for at least an hour to set.
You can wrap beauties in paper and tie them with ribbon to make a fabulous present for a loved one.
