You will need
- 150g dark chocolate chips
- 1 cup desiccated coconut
- 2 tbsp organic cocoa or cacao powder
- 2 tbsp coconut oil, melted
- 2 tbsp pure maple syrup
Method
In a bowl, mix the coconut, maple syrup, melted coconut oil and cocoa powder. Once this is well mixed, press this into ice cube moulds, and place these in the freezer for four hours to set.
Melt the chocolate chips in a bowl over a saucepan with two inches of water in on a low heat, then remove the set coconut mixture from the ice cube moulds and dunk them in the chocolate one by one. Leave to set then enjoy! Store in the fridge for up to one week or freeze for up to two months.
