White Chocolate Rocky Road
These fabulous, colourful White Chocolate Rocky Roads are packed with fruit and nuts. Not only are they tasty, but they look amazingly colourful and festive too. They can be made any time of the year, and the also make the perfect homemade gift for Christmas. Assuming you can resist eating them yourself of course!
This is a no-bake recipe created for us by Ugne Bubnaityte of ‘Great British Bake Off’, professional baker dedicated to healthy living and guilt free recipes. She has used our award winning Food Thoughts Luxury White Chocolate Chips, made of 35% cacao solids, making them the ultimate white chocolate around. Because they are so less sweet than your average white chocolate, they make this White Chocolate Rocky Road test absolutely amazing. Try and tell us what you think.
You will need
- 100g juicy dried cranberries
- 60g pistachio nuts, chopped
- 120g dried chopped apricots, pineapple and other tropical fruit mix with raisins
- 30g Food Thoughts Dark Chocolate Chips, chopped
- 80g ginger bread cookies (or gingerbread men) broken into pieces
- 300g Food Thoughts White Chocolate Chips
Method
Place all ingredients apart from the white chocolate chips in a large bowl. Give them a toss to mix well.
Line a small container with parchment paper and set aside. I used mini bread tin 20x9cm diameter.
Place the white chocolate chips in a heatproof bowl and melt in the microwave (check at 30 second increments) or place bowl over a saucepan of simmering water until melted.
Pour the melted white chocolate chips over the dry ingredients and stir gently until they are thoroughly mixed and all ingredients are coated evenly.
Pour the mix into a lined tin and cover with a sheet of parchment paper. Press firmly so that all ingredients are packed in and stick together. Place in the fridge overnight or freeze for an hour if you need a quick treat!
Perfect cut into bite size pieces as an edible gift, or just a treat after dinner with coffee.
