Microwave Chocolate Mug Cake

This Microwave Chocolate Mug Cake can be adapted to please all taste buds and diets. Replace the Dark Chips with Food Thoughts Luxury White Chocolate Chips for a glorious microwave white chocolate mug cake. For a vegan friendly version, use a dairy free milk option and omit the egg. You can still use our Dark Chocolate Chips as they are plant based. Energy Efficient Recipe – approx energy consumption 1p
You will need
- 2 tbsp self-raising flour
- 50g Food Thoughts Luxury Dark Chocolate Chips
- 2.5 tbsp caster sugar
- 3 tbsp milk
- 1 tbsp vegetable oil
- 1 small free-range egg
- 1 tbsp Food Thoughts Organic Cocoa Powder
- pinch of sea salt
- Cream, vanilla ice-cream or yoghurt to serve (optional)
Method
Combine the flour, sugar and cocoa powder in a bowl. In another bowl, mix the egg with the milk. Set aside.
Choose a good-sized microwavable mug. Add the oil and 30g of the dark chocolate chips and microwave for 20 seconds. Stir with a spoon and microwave again for another 10 seconds.
Add the dry and wet ingredients into the mug and mix well with a spoon until you have a smooth batter. Add 15g of the remaining dark chocolate chips and a pinch of salt and stir again.
Microwave on medium-high power (500W) for 1 minute and 30 seconds. The mug cake should be set on the top. Sprinkle the remaining 5g of dark chocolate chips and enjoy with single cream, a scoop of vanilla ice cream of some plain yoghurt. Simple, beautiful pleasures.
