You will need
- For the Brownie Cups
- 120g pitted dates (around 6 medjool dates)
- 2-3 tbsp orange juice
- 60g nut butter
- 60g Food Thoughts Organic Cocoa Powder
- For the Filling
- 120g Food Thoughts Dark Chocolate Chips
- 1/4 cup orange juice
Method
Add the dates to a bowl and cover with boiling water. Set aside to soak for at least 10 minutes.
Drain the dates then add to a blender along with the orange juice and blend into a puree. You can also use a fork if your dates are soft enough.
Add the puree to a bowl along with nut butter and Cocoa Powder and fold to combine.
Divide the brownie mixture into 6 and press into a muffin tray (silicone works best). Press down with your fingers or a shot glass to create a cup.
Now for the filling, add the Dark Chocolate Chips to a bowl and melt in the microwave in short bursts or on a double boiler. Add the orange juice and mix until smooth.
Divide the filling between your 6 brownie cups and add some orange zest on top. Pop in the fridge to set.
